Paula Roy’s Favourite Foods – season 1, episode 1 recipes

A fun and festive brunch menu!

I’m super excited, but also just a little bit nervous now that my television show is finally on the air. While I loved every minute of making the show, no matter how often you do it, it can still be kind of nerve-wracking to watch yourself on TV. I hope you enjoy the recipes I present and maybe learn a tip or two to help make your own time in the kitchen easier and more enjoyable. Season 1, episode 1, which you can watch online, is all about brunch. I love a mid-morning meal because I sometimes find it’s the best opportunity to gather busy people together. I like brunch menus that feature both sweet and savoury items and in this episode I showcase three of my favourite brunch recipes that are sure to please. The best part? People will think you spent hours in the kitchen when in fact, these are all pretty fast and easy dishes. But be forewarned: your guests will be likely asking for repeat invitations after they taste what you’ve served up. If you find these recipes appealing, I encourage you to please check the Constantly Cooking archives (just search on Paula Roy’s Favourite Foods’) to see recipes from all the show’s episodes plus a whole lot more delicious inspiration!

My brunch menu features the following dishes (click on the titles to go to the recipes):

Lemon-Oat-Ricotta Pancakes

Lemon Oat Ricotta Pancakes

Corn Muffins with Blueberry Cream Cheese Filling

Cornbread style muffins contain a sweet surprise with blueberry cream cheese filling

Smoked Salmon and Strawberry Salad

Salad with smoked salmon, strawberries and goat cheese makes a great brunch or lunch dish.
