Paula Roy’s Favourite Foods – Episode 2 recipes

It’s week two of my new TV show and I’m a little less nervous as tonight’s viewing time approaches (7:30 pm on Rogers Ottawa, Channel 22). I might even watch it all in one sitting this time, instead of having to pause the PVR and take a destressing (chocolate) break partway through. If you missed last week’s episode, you can find a recipe recap here.

Episode 2 features a fabulous lunch menu. As I say in the show’s intro, when I think about lunch I really want to forget about items like sandwiches, canned soup or cookies from a bag. Even though we often feel pressed for time in the middle of the day, there are some great lunch options out there that are easy to make and super delicious. I’ve pulled together a three-course lunch menu that takes only a little bit of time to prepare but delivers great big flavours.

My lunch menu features:

Ten Minute Miso Soup

 Vietnamese Bahn Mi Bread Salad

Upside Down Mini Fruit Cheesecakes

If you enjoy this episode of the show, stay tuned for more tasty meals in the weeks ahead. I also encourage you to look at both my blogs – Constantly Cooking and Whole Foods in Half the Time for more delicious inspiration.
