Paula Roy’s Favourite Foods – season 1, episode 2 recipes

Fresh ideas for light and flavourful lunches!

I had fun pulling together a fabulous lunch menu for this episode. As I say in the show’s intro, when I think about lunch I really want to forget about items like sandwiches, canned soup or cookies from a bag. Even though we often feel pressed for time in the middle of the day, there are some great lunch options out there that are easy to make and super delicious. For season 1, episode 2, which you can watch online, I’ve pulled together a three-course lunch menu that takes only a little bit of time to prepare but delivers great big flavours. If you find these recipes appealing, I encourage you to please check the Constantly Cooking archives (just search on Paula Roy’s Favourite Foods’) to see recipes from all the show’s episodes plus a whole lot more delicious inspiration!

My lunch menu features the following dishes (click on the titles to jump to the recipes):

Ten Minute Miso Soup

 Vietnamese Bahn Mi Bread Salad

Upside Down Mini Fruit Cheesecakes
