A terrific ‘clean out the fridge’ meal!
My favourite taste tester (aka awesome husband) was the inspiration for this recipe which I recently created for Ottawa At Home magazine where I serve as food editor. He was foraging through the fridge and complaining (just a little) about all the tiny portions of leftovers in there. There were a few tablespoons each of sauteed onions and cooked, chopped bacon, three mushrooms, a couple of cherry tomatoes and a small dish of cooked spaghetti. His query was simple: “what are you saving all these things for?” My answer: “you’ll see, in half an hour.” I whipped up these little breakfast beauties and now he’s asking for them every other day. They’re fancy enough for a special breakfast or brunch but easy enough to make and enjoy any day of the week and of course, you can vary the vegetables depending upon what needs using up in your fridge.
