Carrot recipe roundup

Who knew this humble vegetable could be so exciting?

For the past few days, I’ve been inundated with requests to help others plan their menus,  particularly people who are carefully budgeting their food purchases. My approach is based on the ideas of not only making sure you use all the food you have on hand (so there is no wastage) but also finding creative ways to enjoy inexpensive ingredients that can be stored (or refrigerated) for long periods of time. Here are some of my favourite ways to prepare carrots – a nice change of pace if you, like me, just bought a huge bag. If you think some of these are a little too exotic for some members of your family, roast or steam some plain for them and let everyone else enjoy these carrot flavour parties.
