Barley recipe roundup

A nutritional powerhouse that’s delicious and versatile!

I always keep barley in my pantry – it’s an inexpensive, flexible ingredient that stores well for a long period of time. Did you know that Canada is the sixth largest producer of barley in the world, with almost 9 million tonnes grown here annually? Rich in many nutrients, barley offers lots of  health benefits: it improves digestion, facilitates weight loss and lowers cholesterol levels. It can even contribute to a healthier heart! On top of all that, barley has a delicious, almost nutty flavour that is the perfect backdrop to sauces and dressings as well as a terrific soup or stew add-in. Here are some of my favourite ways to enjoy barley (click on the titles to jump to the recipes).
