If you’ve watched past episodes of Paula Roy’s Favourite Foods, you’ve likely seen how much I adore vegetables. Where I live, we’re fortunate to have year-round access to lots of different kinds of fresh produce, much of it grown locally. I like to treat vegetables with the care and attention they deserve, to honour the hardworking farmers who feed us while also serving up some delicious side dishes, three of which are featured in this episode (and you can find three more great side dish recipes in season 4, episode 3 as well as in several of past seasons’ episodes, available in the archives on this site).
