Tasty ways to incorporate quinoa into your menus!

I first encountered quinoa in the early 1990s when a friend who was living in Ecuador sent some to me. I’d never heard of this nutty-tasting little seed which has been grown and harvested for millenia in in South America. It can be prepared similarly to many grains and I eagerly incorporated it into our family’s diet after finding out how easy to cook and versatile it is. Quinoa is a good source of protein and fibre, is naturally gluten-free and also a rich source of many essential minerals and nutrients.
