Growing up, I was only aware of two ways to prepare sweet potatoes: baked in the skin (similar to regular potatoes) or in an ‘over the top’ casserole with brown sugar, butter, cranberries and pecans. I wasn’t a huge fan of either as a kid. Over the years, however, I’ve come to love this versatile vegetable not only for its fabulous flavour and colour, but also because it’s packed with fibre, antioxidants, vitamins, and minerals.
